When developing my plugins I prefer to just uses FetchXml FetchExpression but other use QueryExpression.. Should I be bothered or should I jus keep using FetchExpression regardless of the simplicity or complexity of the query.

Concretely, QueryExpression generate behind fetchXml. You can use tools to convert your fetchXml into a QueryExpression. My favorite tool is fetchXmlbuiler available on XrmToolBox.

It's up to you what to use during building of code. Personally I prefer QueryExpression/QueryByAttribute but it's just my personal preference.
