Preference center RTM

We need help with setting up a preference center. We have several categories of subscription (topics), and we want them to be set as /opt-out/ by default to avoid confusing customers.
Some of these categories are only intended for certain contacts, so they are simply categories/checkboxes that should not be displayed to everyone who opens the preference center.

What are our options? Is one of them to have a preference center for each topic/category, or is it possible to use a single preference center while hiding certain categories for certain contacts? In our case, it would result in 6 different preference centers, which seems quite unreasonable.

We have looked into using regular forms to subscribe to newsletters as a substitute for preference center, but there the contact needs to fill in their mobile number and email themselves, which we prefer to avoid.
