I would like to change the label of the "Sign in" button on the portal sitemap, however I did not find any content snippet corresponding to this label. Could you please point me in the right direction where to look for this setting?

If you mean the menu item you need to add a new content snippet.

I found one suggestion from Arpit would be much helpful to you which only needs to create a new Content Snippet (Portals > Content Snippet) 'Account/SignIn/PageCopy' and start writing the Html/JQuery/CSS there in order to make customize default Sign Page of your CRM Portals.
