We need to control which user is modifying the sales order reservations, is there any configuration that allows to know this or is there any way that once the order is created the reservations cannot be modified?

You can setup database log on inventTrans table (deletion) and see what's going on. What happens is when you reserve something, an additional line is created in inventTrans table. when reservation is removed then it's removed. You have to look at few other things while looking at deleted records.
Note that - database log is very heavy on system from performance system if used on table like inventTrans, so be careful with it and when you enable it.
I would not suggest to use the database logging features on the inventory transactions. The table can become huge and you have to review and clean up the logging. This would become unwieldy.
When you really need to have a kind of reservation history, you can probably better do it with a customization. E.g. create a separate table and extend the logic for manual and automatic reservations to fill the new reservation history table. Still you will get potentially a lot of records, but at least it is more manageable and will not have performance impact during several postings.
