I would like to create data model based on the production control tables but It getting diffiuclt to understand what each table presents. In AX, there is the source with ERD and is pretty easy to understand. Im lookig for something similar for D365 or some example ERDs for production domain.

The ERD for AX 2012 R2 was deprecated by Microsoft, and you can find some copies on the internet. There is no similar information for Dynamics 365. Larger parts of the ERD for AX 2012 R2 is still valid. You can use this as a base and check other tables and references in the AOT.
