No Option for Calculated or Rollup Field Despite Being Under Limit for Organization and Entity

I am trying to make a rollup date field, but only the "Simple" option displays on the "Field Type" dropdown. There are no calculated or rollup fields on this entity and 78 total rollup fields in the organization. There are also multiple 1 to many, many to 1, and many to many relationships declared on this entity.

What else could be preventing "Calculated" and "Rollup" options from appearing in the dropdown?

Here's more detailed info with screenshots (some words blotted out since this is for work)

Here is what the new field popup looks to me. I changed nothing before taking the screenshot. The dropdown only contains the "Simple" option when I change the type to numeric ones.

According to the systems jobs page, only 78 rollup fields exist in total. Additionally, no rollup or calculated fields exist on this entity

This entity also has 68 1:N, 23 N:1, and 7 N:N relationships.

    Did you check through the new user interface?

    I can do it with the old user interface toopastedimage1637036881142v2.png

    You should need to create a support request for it if you are not able to do it in the new interface too.
