You can have users approve through the Workflow emails, but there is a bit that goes into it.
First, you will need to setup Web Services.
Then you would need to make Web Services external by adding HTTPS:
Then you would have to setup emails for Workflow.

As a note, the users will need to log into the prompt when the click the email workflow buttons using an account on the same domain as the SQL Server, otherwise there is some further requirements with Domain trusts (all most be two-way).
