I can't figure out how to send a document by email from this panel
I can open that document in Word, print it, but I can't find a way to send it directly by email, even if in the document set up I can see options like "e-mail as PDF", "email client" etcetera. I thought to find a button "send by email" that doesn't exist.
can anyone help me please?

For your knowledge, there is no inbuilt functionality for send the document via email in nav 2013 version. I have also feel this problem. But I have follow these steps to develop these functionality in given link to send the document via email.

I'm unaware of your localization (W1, IT, other?), but in North America, I don't recall we had the ability to e-mail order confirmations or invoices with standard NAV 2013 R2.
The fields in your screenshot may be from a customization or an ISV solution (especially considering how the word Outlook uses incorrect upper/lower case in the spelling).
In NAV 2013 R2, we relied on Zetadocs Express from Equisys which is included in every NAV customer's license (NAV 2009 R2 and newer, at least in North America). It must be downloaded separately, installed and configured like any other ISV solution. It's purpose is to address Document Capture and Document Delivery needs.
Once set up you will find Save and Send functions on desired pages. The Send function creates a PDF attachment of the document and creates an e-mail with a subject line referencing the document. You can add content to the body and push a button to send the e-mail using SMTP, or open in Outlook and send from there.
In NAV 2016 and 2017, Microsoft has made many improvements in this area (custom document layouts and recipients for each sales document for each customer, ability to E-mail document directly from Sales Quote / Order / Posted Invoice, etc.
