can we do YE in 2020 with GP 2015, knowing we have to manually change tax info when needed and order 2020 W2, 1099, State tax forms and manually typing out the forms? Oh, I forgot the FICA September 1 to December 31 change.

You can always complete year-end processes in GP, you will just have to keep in mind all of the changes you are not getting. For example, for 1099's there are new requirements that are only handled in the year-end updates.
I would strongly recommend either upgrading or looking into third parties to help make sure everything is correct.
Thanks for the heads up on the 1099s, I may ask more questions.
