Hi,
Murray Fife published a very good and concise book about costing sheets ("Configuring Costing and Cost Sheets in Dynamics AX 2012"). It is quite cheap and gives you a very good overview on the usage of the costing sheet. I believe this is worth the Investment to get hopefully all of your questions in regards to costing sheets answered.

Costing split and presentation.
Overheads by split or in one group depending upon configuration
Comparisons of estimate to actual in a meaningful format.
I would also suggest the guide from mr. Fife.
What Steven sais is also spot on...
What we basically use it for is group together different types of cost to create the indirect cost calculations (overhead). Normally split on man/machine and inventory cost.
You can also use it to create different indirect cost on purchased items as well.
