Hi,
I just disabled page and lock escalation for a table. How long will this be kept and is there any way to find out the history of the lock escalation so we know which tables have been disabled lock escalation?

It's kept forever. But if you replace the database with a copy from another system, I believe that the changes in your original database are lost. Because you chose to replace it with a new one.
You can see the environment history in LCS to see which tables have been disabled for lock escalation.

Lock escalation will be disabled until you will not decide to enable it back.
Page locks are related to indexes and a new index or index change for a table will break this setup and you will need to disable page locks again.
Recently for PROD environment watchdog was added to monitor indexes changes and if you disable page locks before, the watchdog will disable page locks for new\changed indexes as well.
For the sandbox environment, you still need to do it manually (or copy the database from PROD if possible).
