I'd like to find a way to add a "keywords" field to an Account: Activity in Sales Hub. This would be similar to the keyword field found in articles. It would be able to act like a tag so that I can search for notes that contain these keywords.

Do you mean the #tag for Posts in Timeline?
If yes, it is not available for activities. But you can add the keywords in the subject of the activities.
E.g.
It can be filtered out also.
