When creating a sales order, in order line, change the item description of a selected item, if the Description matches one of the item description in Item Card, system will prompt a question and ask if I want to change to another item.
Is there any way to disable this system check and we can simply put in the content we want for the orders?

Hi,
From a functional point of view: No. But you are able to influence the question if you want to create a new Item when the description is not found (go into Sales & Receivable Setup and disable "Create Item from Descriptions")
From a technical point of view: Yes. It's in Table 37 "Sales Line", OnValidate-Trigger of field Description.
