Is it possible to get transaction text automatic for a payment journal? Now we have to put them there one-by-one...

It is not OOB. You need small customization to populate transaction text automatically.
I found it under basic - setup - transaction text. Next question: If I have different journals is it possible to choose just to have transaction text on just one of them?

The transaction text can be setup per type. If you mean different journal means different types then the answer is yes. For the same type, e.g. multiple payment journals then the answer is no.
Using 'transaction text', I think you can only setup by transaction type. So you wouldn't be able to do it for two different journal names of the same journal type.
You could also look at 'Journal texts' functionality (G/L -> Setup -> Journals). You can assign a short code to some piece of text that you often type into the transaction text field. The help for AX 2012 is here:
