The sample code shipped with the SDK is demonstrating usage of Microsoft and Facebook accounts through ACS, the steps to set it up are published in How to setup eCommerce to authenticate with Facebook and Windows Live but ACS has been retired so those 2 options in the SDK don't work anymore...
Retail Server, which is leveraged in eCommerce scenarios, supports id_tokens and therefore can be used with any Open ID Connect provider. Later the sample in the SDK will be updated with a code demonstrating how to utilize AAD B2C to authenticate to eCommerce with variety of social identity providers but if you need that 'now' - you don't have to wait and can look into existing AAD B2C samples to see how to acquire a security token, once acquired, pass it to Retail Server the same way the SDK does today.
In addition to AAD B2C you can also leverage any other Open ID Connect provider, Google is just one of those if signing in with Google accounts is what you need. To proceed with that you need to register your web application first by leveraging for instance

Once you created your application update the application's details in eCommerce's web.config
