Is it possible to make the field "Email Address" mandatory in the worker form?

Hello Ana,
Yes, you can make the field email address mandatory by following the steps below:
Navigate to forms from the new contact page, Click on Forms --.
double click on Email filed and click on Details as shown below
Click on Edit set the Field requirement option to Business required and save and close.
Now refresh CRM and Open a new contact form you will see the email filed as mandatory field.

There will be an update to set fields mandatory using personalization. I'm not sure if it is already available in your Dynamics 365 Human Resources environment.
