I'd like to run some TSQL to pull data from FS365 and into an on-premise SQL Server and prefer to run some joint queries to get ID fields correct.
I don't see any tutorials though on how you can create a Linked Server pointing to a Dynamics 365 dataverse.

You connect with dataverse. Where field service holds its data.
I'm guessing you meant to write that you connect TO Dataverse because "with" Dataverse would mean it's a tool to use.
The challenge is that I don't find any good tutorials on how to get access to the entities like Products, Qutes, etc. with Synapse.
I meant that with a synapse link to dataverse you can export required tables to a sql like datalake where you can execute the linked queries or query complex and composite datasets based on multiple resources.

After looking into Synapse it seems pretty overkill.
I'm currently looking to see if Power Automate Flows will fit the bill.
