Hi, does anyone know of an easy way to get a customers order history per Item live on screen while in a Sales Order?

Not directly from the sales order screen, but you can access customer/sales item statistics report from the menu or from the customer list or customer card. You could add a simple modification to access that report from sales order for the sell-to customer no.

Not sure if this is what you mean but maybe you could use the "Demand Overview" in the Ribbon.
Maybe you could elaborate more on what details you exactly need when you mean "Sales Order history"
