Hi All
I can see we can manage Opportunity, Sale Order, Quote, Invoice, Agreement, but I cannot see how to manage Sale Goals in Field Services - Could you tell me how to manage it?

You could only manage your goals in Sales. Please refer to this user guide.
If you have coding experience, you could develop goals. Please refer to this article.

In the case to manage goals in Sale, we need to buy more because user full roles in Field Services cannot access Goals. Maybe we need to develop it.
If you are unable to access Goals, then I recommend that you notify your business manager or users who have security roles that are authorized for Goals.
Because the prerequisite for developing Goals is that you have Goals license.
So you could notify users with Goals permission to modify Goals.

The issues here are you need to buy more license for Sale - e.g. you buy 100 user for Field Services module, they cannot access into Goals - you have to buy Sale module for 100 users to access into Goals. That is problem.

Goals are not for field service. What is the business requirement you are trying to achieve? There are more than likely other ways to accomplish what you’re looking to do but it’ll require some configuration and reporting - either SSRS or PowerBi
