how to make the master planning batch considers only part of open sales orders in AX according to their dates?

To be short, there is no setup that could make MRP only considers part of the open sales.
The part that you mentioned on 'According to their dates' in MRP setup you assign the horizon that MRP will review, maybe you could test with multiple lines with different dates or delivery schedule to accomplish this
Only the Sales quotations has the probability setup to be or not to be included in MRP, but it's also the full quotation.
