I have a client that wants us to build and manage a digital contact centre and customer voice instance, that integrates with their existing Dynamics CRM, managed by a third party.

When creating a solution, use your organization's specific publisher, as having a unique publisher can differentiate your solution from those of other organizations.

You can add a field like Flag to each record which will have company name. As per this information you can identify where it is belongs to.
Can you elaborate your 2nd question more? Also does they will login in CRM ? If yes then you can create a owner team and make sure those records will have owner as owner team. All the users who belong to that organisation are part of that owner team.
