I know PartnerSource/CustomerSource have eLearning link on them, but I don't believe there is any Dynamics GP content there.
I'd say currently, the Dynamics GP Docs site and blogs would have the most recent information in them, but not so much 'training' content.
YouTube had some videos out on it showing Dynamics GP processes, so that may be worth looking at.
I'm not sure if any third-party or other sites have 'training' content for Dynamics GP out there as well.
In Dynamics GP itself, there are documents and then the Help files which has a lot of information in it, that could be useful.
Is there anything specific you're looking for or just overall training content for Dynamics GP?
