Hey guys,
My company is
moving to NAV 6.0 and part of my job is to create customer specific
documentation for the people in my company. Is there any type of training or
reference marital available for NAV 6.0 SP1 Classic?
Currently I have a 200 page manual called "Microsoft Business
Solutions-Navision 4.0 SP1, Course 8360B: Manufacturing Training 1" and it
is great, but outdated. Is there anything else floating around that might be
more current?

Did you try partner source? If not go to partner source and then search in there. There are many training materials available and I am sure you will be able to find a suitable document for your requirement. And also please check this link also :
Manual for navision 2009 classic
I was able to identify that using the following link and filter to NAV material on Customer Source, there is still the Version 5.00/5.00 SP1 training material available for download in PDF Format. There were limited application changes between 5.00 and 2009 (6.0), so the Classic screen shots in the 5.00 material should help you.

There is a lot of documentation available including very nice walkthrough type documents on MSDN. You can start at this link, and then under this are more links to SP1, R2, Application, Developer, etc.

I am not sure, but I believe to get the type of manual you are referring too you must go through the actual course and pay for the course/documentation. You can check with your partner on that and they have an Account Manager they can work with to check into those specific guides.
