I have the UI builder class, I need that when the user clicks on the segmented entry control, the system updates the lookup method based on a ledgerJournalACType field (same as LedgerJournalTransVendInvoice Fields AccountType and Account)

I think it's not possible to add segmented entry control to UI builder class - Instead you can create a new form and use it as the lookup with the filters. There is one standard form available for worker lookup - Refer to EDT HcmWorkerRecId - In the FormRef property they will be mapping HcmWorkerLookupForm which will have filters - Based on the filter grid will get appropriate records.
Refer to the below screenshot >> Payroll >> All earning statement >> Create new earning statement.
