I cannot correct or cancel the packing slip for the Project sales order, both buttons are grey out.
Hi FuHu,
A workaround is creating a second sales order line for the same item but with a negative quantity.
Have you tried doing that already?

Is that the only way to cancel the packing slip?
Nope. In my case I can see and use the cancel button. Not sure why this is not working in your environment. Probably your role or some modifications don't allow you doing that.
If you have a technical / admin guy around, get into touch with him/her.
Otherwise, using the workaround might be a simple and fast resolution.
