I would like to personalise mrkt mails using not only related data to table contact but also from other tables. This feature should be released in the release 2021 Wave 1 but I cannot find it.

Does anybody of you have experience or an idea how to use this functionality? I cannot find any info about except:

They describe this functionality but does not show how and where it can be used

This feature was released in Dec 2022 release (and was in preview before that where it has to be enabled via a feature switch in the settings area). Please make sure your org is on the Dec 2022 release or later.
