You are correct! The string "CRM:XXXXXXX" appended to the end of your email subject lines during campaigns is the Tracking Token feature in Dynamics 365. This token is designed to help Dynamics 365 automatically correlate email replies to the original sent email and track email conversations.
The instructions you found are the standard way to disable or configure the Tracking Token at the system level. The fact that you don't see the "Use tracking token" checkbox on your System Settings > Email tab indicates one of the following:
