Hello Alexandra,
Do you know if some changes have been made to the configuration of your payment methods, etc.?
Has somebody made an upgrade over the last days that might be responsible for this issue?
In the journal, do you see the method of payment that has been selected and does this method of payment match with the one that is recorded with your open positions?

You said it's happening only to one user.
Have you tried this in a different environment?
You may try to clear that user's cache.
Ask the affected user to do the following:
Click on the right up corner engine icon > User option > Usage data > Reset usage data > User
This error message says that the CompanyName is blank. If you open in designer the payment model mapping 1611 (assuming you are using standard or your own payment model mapping), navigate to model/Payments/InitiatingParty/Name you will find that this field takes data from table CompanyInfo, field Name. If this field is not populated, then you get that error message that the List is empty at 'model/Payments'.
Perhaps if this happens to one user, that user is restricted on that legal entity.
