Is enabling Word Template Functionality a pre-requisite for emailing Vendor Remittances??
I thought you could just email a PDF version of the canned GP Vendor Remittance report. Is that not the case??
Also, can someone point me to a good KB or video of the necessary setup steps?

As far as I'm aware you have to setup Word Templates to email remittances. (its certainly the way I have set them up anyway)

With regards sending by PDF its also worth checking out the Dynamics GP system requirements for your version. For example in the GP 2015 system requirements it states PDF isn't supported for the "Exchange" server type:
However when I check the same section for GP 2018 this has gone which suggests it is supported
