Is there a screen I can navigate to or alternatively a report I can run to see all GRNs generated against a single PO that would include the name of the person who completed each GRN?

Out of the box, there is no view or report for this. You can consider a customization.
Procurement Sourcing > Purchase order > Receive product > Product Receipt
