Are calls to services logged in D365 for operations like they are in 2012?

Could you please elaborate your question? Are you talking about integration (which kind of services), service management or some other service? What information do you want to log?

I want to log calls to the JSON services. If possible I would like to log the parameters that are passed and any information that would have been sent to the infolog. Is that possible?
It depends on what exactly you want to achieve.
In dev environments, you can do anything, such us using ETW, IIS logs and so on. In production, you can use telemetry and custom code.
If you want it in infolog, custom X++ code inside your service is the only way (but nobody will be able to see the infolog, as there is no user except of the service; you can only use the infolog for logging).
