How can I access custom fields with the data connector?

Do you mean you have added custom fields to a standard table and want to see these fields in Excel add-in?
Yes.
You need to identify the data entity / entities available related to the table you have added the custom field to. You can then create an extension of this data entity and add the custom field there. Next you need to create an extension of the staging table related to the entity and add the new field there as well.
A good example of this will be the fields added to table extension SalesTable.RevRec.
The same fields have been added to data entity extension - SalesOrderHeaderV2Entity.RevRec
Finally, the fields are added to the extension of the staging table - SalesOrderHeaderV2Staging.RevRec
