Hi, we'd like to use only the Accounts Receivable part of Dynamics 365 for Finance, as we already use another service for the General Ledger. Any idea how we can 'switch off' the other parts of Finance i.e. everything other than the Accounts Receivable part?

Currently you cannot turn off features at that level of granularity, unfortunately.
For now you can select which User Experience to use in a given company (found in the Company Information page).
We're working on features/capabilities that will allow you to define which feature are in use in a given company. It will be added to the product in a future version.
