The only place where I saw posting definitions serve a real life business scenario was
1. When doing Fund Accounting, which is something public sector organizations do.
Posting definitions enable them to trigger multiple posting for the posting of a single voucher.
2. When needing pre-encumbrance for purchase orders
In vast majority of other business cases, posting profiles are sufficient (and much simpler to set up).
