How to create change tracking for items (Products) and ProductAttributes

Hi I tried to Setup a Change tracking for creating, deleting and modifying product and Attributes.(Dimensions)

My Problem is there are so many tables in the wizard and I do not know which ones to take. Can someone give an advice?

With the Databaselog I am not able to find the tables in the wizard because they are named different from what I expect

How can I get the changes from DB logging to Export related records via XML?

I tried to use the AifChangeTracking to read the AifChangeTrackingTable
