I'm seeking some clarity on this as I'm struggling to find anything concrete from Microsoft.
Around 5 years ago, we signed up to a promotional bundle of O365 E3 and Dynamics 365 Sales Enterprise Edition.
Recently, we have been tasked with identifying some cost saving measures. As we no longer require the E3 features, we will "downgrade" to M365 Business Standard. We'd also like to "downgrade" to Dynamics 365 Sales Professional as none of the limitations will affect us.
The guide I've read here talks you through the process thread to needle. However, if I look at our installed Solutions, there is no sign of the Dynamics 365 Sales Enterprise solution. Presumably, I will just have to skip the removal step in the process? If this is correct, I just need to purchase the Sales Professional licences, assign the licences and install the Sales Professional app? Will this have an effect on my custom app that I created for the Unified Interface transition? Will we still be able to use this? If I just licence my users with Sales Professional licences and do nothing else, what would happen?

My suggestion is to test it on a test environment the steps your shared on the link above first in order to prevent blocking issues.
Please not that the option ( If I just licence my users with Sales Professional licences and do nothing else, what would happen? )you describe is not possible or either compliant with Microsoft Polices.
