As far as I am aware, we can only populate the data for the case entity, but I need to populate the data into the contact entity from the outlook email, Does this require some customization or are there other alternatives available?

When you receive or create an email or appointment for a new customer, you can use their email address to add them as a new contact, lead, or account in Dynamics 365. This article explains how to do this.

I want to auto populate the information from the email(like first name, last name, email, etc.) while creating a new contact from outlook.
It's impossible to create new contacts with information from email automatically in outlook.
Maybe you can try to create contact firstly, and track it to Dynamics 365, then you can use workflow/flow/js to get information from email to update the contact.
