how to calculate the time in workflow process which i would like to know what are the tables and forms hitting and how much time has taking for the every action?

The report that Rik mentioned should be useful for your situation.
But if you still would like to track the history from tables you can check:
Your reference table (PurchTable, PurchReqTable etc.)
