I'd like to create an entity "reminders" which lists all invoices with a specific field set to yes for a given account in a grid like you'd see with regular invoice products. Is it possible to sum up all totalamounts of the invoices displayed in the grid and add a penalty fee on top of it and display it as new totalamount to pay?

You can create a rollup feld and customize the calculation that you want for specific records.
Create a rollup field to aggregate/sum up all total amounts of the invoices and use a calculated field to add a penalty fee on top of it.
