I want to find the technician is working or he taken off for the day.
cant find the entity where this working and Time off is getting from.Thanks in Advance
The main entities are Calendar > Calendarrule > Innercalendarrule (Its quite confusing) These are not stored as regular tables

You will need to fetch the 'Innercalendarrule' table to find the 'Time off'
This is all stored in the calendar entity itself which is different than standard Dataverse entities. In FIeld Service we have some API's to interact with the calendar - docs.microsoft.com/.../field-service-work-hours-calendar-api
Can you elaborate on what you would like to accomplish? Perhaps I can offer further advice!

Actually I am creating a process which will insert booking on creating a work order, how can we check that the technician availability .i.e technician is working or Time off .

You can call the schedule assistant API programmatically which incorporates working hours, time off, and existing bookings. - Search resource availability API in Dynamics 365 Field Service | Microsoft Docs
