Currently I can see Cases, Contacts, Knowledge Articles, Leads, Opportunities and Organisations.
I'd dearly love to set a Campaign in the Regarding field from Outlook, without having to navigate into Dynamics to do this.

Hi,
You just need to customize the Dynamics 365 App for Outlook in App Designer.
Add the Campaign entity into the entities list.
Save and publish the app, then you'll see the campaign records in the regarding lookup field.
Stay up to date on forum activity by subscribing. You can also customize your in-app and email Notification settings across all subscriptions.
