I'd like to use a different delimter than comma and am looking to see if that's possible.

so just create your own source data format and choose out of the list.
Thanks, that's just what I was looking for. Anyway to add values there that will work, even with customization? I see the options are from the DMFDelimiter enum, not sure if I could extend that and adding another options would work or not. Right clicking on the enum does not give the create extension option or create extension in new project option.

I don`t know if it is possible to extend the enum. In the past (older versions of D365) it was not possible due to any restriction from Microsoft. Based on documentation from MS docs.microsoft.com/.../add-enum-value it depends on the enum property if you can extend it.
If you can't find a delimiter that you need, you can always find and replace the delimiter with a script after exporting the file from D365FO.
What delimiter would you like to use? Are you sure that the target system can't understand any delimiter that D365FO can provide?
