We have an issue with 1 user where her font size is incredibly large.
Cleared her Usage Data.
Issue can still be reproduced on multiple surfaces and laptops.

Check the font tab in the User Options form. It's not usage data.

We are on 2012 R3, I did not see a font tab under Users->Options (already looked)

Just to be clear, you have a particular user (only 1?) that can connect to a number of devices and see it's AX interface with higher fonts?
Are any other application displaying the same large fonts for this user? Isn't this maybe a windows settings, because, I do not think in AX 2012 there is any option anymore to increase the font.

We've tried to log in as her from her surface pro. Also tried my laptop, a different surface and a nopix (dumb) terminal. All 4 devices displayed very large font for only her user.
Also, we use RDP to access our environment.

Whilst logged into the RDP as the user, does it make a difference if you right-click on the shortcut you use to open AX and do:
Properties -> Compatibility -> Disable display scaling on high DPI settings
?

Right, sorry. I was imagining that the users were using Remote Desktop Connection to open a remote desktop. I'm not sure what flavor of RDP that is, but you can ignore my suggestion.
You might get more background by reading my investigations into this topic, including the comments at the bottom of the blog post. I'm not sure how you go about translating that solution in to whatever shortcut your RDP solution is presenting to the users, or even if it is relevant.

Do you think it's possible to actually show a picture of how a basic AX form looks in the context (also include the Start Button so we see its font).

Could you please check the UserInfo table's field "FormFontSize" for the user?
By default value should be 9.
