Is it possible to add custom fields to the main project area? For example, I'd like to add a Projected Project Completion date in the General area.

Note in the middle that there is an estimation form, where you have the option to include a date in Finish Date.
Finish date is an estimation.
You could change the Display Name for this entity for example or even use the XRMToolbox to change in all places at once.
This is a general question!
Overall, yes, you could add a custom field, but consider what type of behavior you need and if the data in this field needs to be carried over into other forms. The existing fields have logic behind the scenes and depending on where you add this new field it would not consider the custom one.
I have added a field (column) for the PO order # and mapped that to show on the Invoice entity (table). Just test every change/iteration to make sure nothing is breaking, this way you learn which customization might be doing damage so you can “revert” things. Personally I try to reuse as much the OOTB as possible to keep the implementation lite.
