We are working with D365 trying to create an user for read-only purposes to help us visualize information in SQL Server.
What would be the best way to query information from the Dataverse and at the same time been constantly refreshing the info. Thanks.

You can use SQL to query data from Dynamics already using the TDS endpoint.

Access to the tables conform to security role access and because TDS is read only. You don't have to worry about a user accidently running a SQL script that could insert or change something in the database.

MikeC282 response is probably one of the best you can have. You can also use PowerBI with dataverse connector, and this would use the user's credential, therefore limiting access to data.
The other approach would be to create an application with its own service principal (and not a password but a Client+Secret), and add this to the Dynamics environment. After this, you can use this application account to impersonate your connection to data.
