I tried to manage Omnichannel set up in my environment DEV and I got an internal error.
I need to enable only chat for now.

In CRM security roles
Environment maker
Costumer service app access
System Admin
System customizer

The best approach would be have a ticket with Microsoft Support to look into telemetry the error details, but I would like to share some guidance that you can try meanwhile :
Please consider to create a new trial org in your region for this tenant, via the first option on docs.microsoft.com/.../try-channels, and then re-try the Omnichannel onboarding for your org. Potentially this will help to fix the behavior, but if not get success I would consider the ticket
