Demo/Trial CE Organisations (no more create new account option)

Since MS no longer offers the create new account (tenant) option for setting up trial organisations, what is everyone doing to provision demo environments for prospective clients? For example, our company (the MS partner) does not have Project Ops licenses so no point in setting up the trial in our tenant...
