Can you please confirm how the coupon barcode is generated?
Are you using the standard Dynamics 365 Commerce coupon barcode setup, or are you generating/printing the barcode through Business document management / Electronic reporting?
If the barcode is generated through Business document management / ER, then it should be possible to control the value that is encoded in the barcode. For example, you can keep the original value, or transform it to uppercase/lowercase in the ER format before generating the barcode image.
