Difference between opening a field from Front-end and Back-end?

What is the difference between opening a field from front-end (going either by path or Search feature) and from back-end( development environment- using tables). In most cases, I have noticed that back-end table provides more info or functionality.

I would be much grateful if someone can shed some light on this issue.

    table will have all fields.

    pages (UI) will have either all or only added fields from table to pages.
