Forgive me I'm not very knowledgeable in this and I've inherited a system with no training. I want to modify the ribbon in ribbon workbench and it asks me to choose a solution. Almost all of our solutions are unmanaged.
Let's say I have an old unmanaged solution with the contact entity in it that has since been updated in another unmanaged solution or the default solution. If I changed the ribbon and published it in the old solution, would the default contact entity revert back in any way to the old contact entity? Or does the unmanaged solution just track the fact that it contains the contact entity, but not specifically what was in it?

the customizations that are in your unmanaged solution are the same as your default solution. This is the case for all unmanaged solutions in your environment.
Using an old unmanaged solution will not take over the old customizations.
As he said, old unmanaged solution will not take over the old customizations.
All the Unmanaged components stay at their latest version always.
In your case, even if contact is updated thru other Unmanaged Solutions(let's say sol2), but it will contain its latest copy in the old solution(sol1) too.
So when you use old solution(sol1) to update ribbon, it will take effect on the latest version of contact. It will NOT take the contact entity to its old state( a state without sol2).
After you make change, your contact entity will be there with the latest changes( sol2 changes+ ribbon changes) in all the Unmanaged and default solutions.
